Easy and Delicious Lunch or Dinner.

Good Monday everyone! I had a wonderful weekend, and I hope you all did too. When Monday rolls around you don't feel like preparing something that takes a lot of work for lunch/dinner. This salad and the muffin paried together make an very easy meal and it tastes so good. The kidney beans in the salad add a good healthy kick and mm, I love kidney beans. BBQ Ranch Salad

Ingredients:

1 cup cubed cooked chicken breast

1 cup canned kidney beans, rinsed and drained

1 small tomato, chopped

1/3 cup canned corn
2 tablespoons chopped red onion (optional)

1/4 cup ranch salad dressing

1 tablespoon barbecue sauce

1-1/2 cups torn romaine
DIRECTIONS:

In a small bowl, combine the chicken, kidney beans, tomato, corn and onion. Combine ranch dressing and barbecue sauce; pour over salad and toss to coat. Cover and refrigerate for 30 minutes. Divide romaine between two salad plates; top with salad. Yield: 2 servings.

Ham & Cheese Muffins

2 eggs

3 cups Bisquick mix

1 cup milk

3 tablespoons vegetable oil

1 1/2 cups shredded Cheddar cheese

1 cup chopped ham, sandwich meat
DIRECTIONS:

Heat oven to 400°F. Spray bottoms and sides of 12 regular-size muffin cups with cooking spray. (Spray will work better than greasing or using paper muffin liners.) Beat eggs slightly in medium bowl with fork. Stir in Bisquick mix, milk and oil just until moistened. Stir in 3/4 cup of the cheese and the ham. Divide batter evenly among muffin cups. Sprinkle remaining cheese evenly over tops of muffins. Bake 18 to 20 minutes or until light golden brown. Immediately remove from pan. Serve warm. Wrap and refrigerate any remaining muffins.
